Liège Waffles

What you need

Ingredients for this recipe: Plain flour, Instant dried yeast (one sachet), Eggs, Whole Milk, Butter, Honey, Vanilla and Pearl sugar*. Measurements will be provided at each step.

* The most important ingredient that sets this waffle apart from the regular waffle. You can get this from Amazon - Lars' Own Belgian Pearl Sugar

Step 1

  • 1 lb plain flour
  • 1 sachet Instant Yeast
  • 2 eggs
  • 1 cup whole milk
  • 2 oz homey
  • 1/2 lb butter

Mix flour and yeast in a large bowl; beat in eggs one-by-one. Then add milk and honey gradually, beating all the while, to make a thick batter or moist dough. Melt butter and add gradually to the batter, continue beating the batter. Cover with cling film and leave overnight at room temperature. Note: I used a stand-mixer but this can be prepared by hand as well.

Step 2

  • 8 oz pearl sugar
  • 1 teaspoon vanilla extract

Next day (or 8 hours later) - Mix pearl sugar (yes the whole packet if you are using Lars' Own brand) and vanilla extract into the dough that sat overnight. Let the it stand in a warm place for another 15-30 minutes.

Step 3

Heat the waffle iron; brush lightly with butter or oil. Ladle batter into iron (leave room for the batter to expand) and close. The waffles should be dark brown when they come out of the iron, not golden brown.
Once the sugar has cooled it is ready to serve. It gets crunchier after it is cooled a little. Serve with fresh fruits and of course a good cup of coffee :). We have blackberries at the market so that's our berry pick for today (as seen on the photo). Enjoy!
